This coffee is a bold expression of innovation and heritage from Los Nogales in Pitalito, Huila. Carefully produced under the stewardship of Oscar Hernández, it showcases how advanced fermentation techniques can elevate traditional Colombian varieties into something remarkably expressive. The Producer

Los Nogales is a multigenerational coffee farm in Pitalito, Huila, founded in 1952 by Ricardo Hernández. Today, the farm is led by third-generation producer Oscar Hernández, who continues his family’s legacy by combining tradition with cutting-edge processing techniques. With a strong focus on innovation and sustainability, Oscar has transformed Los Nogales into a modern specialty coffee producer, ensuring the farm’s long-term success while honoring the values passed down through generations.

The Process

This coffee undergoes a signature, proprietary advanced fermentation process developed at Los Nogales. A specific yeast strain is introduced during fermentation to carefully guide flavor development, enhancing sweetness and complexity. This is followed by thermal shock processing, which rapidly stabilizes the fermentation and helps lock in vibrant fruit characteristics. Controlled oxidation further refines the profile, resulting in a layered, expressive cup with pronounced fruit intensity, balanced acidity, and a smooth, chocolate-forward finish.


Take a Sip

Bright, juicy red fruit leads the cup, opening with cherry before unfolding into a vibrant fruit cocktail of peach, pear, and tropical mango. The sweetness is lush and expressive, supported by lively acidity that keeps the cup fresh and dynamic. As it cools, the coffee settles into a smooth, indulgent finish reminiscent of rich ganache, leaving a lasting impression of balance and depth.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
