Produced by Jorge Raul Rivera, it represents a refined expression of Pacamara brought to life through a carefully executed washed process. The Producer

Jorge Raul Rivera is a renowned coffee producer from Chalatenango, El Salvador, with decades of experience in agriculture. He began his journey in farming in 1979 after purchasing Finca Santa Rosa with his brother, José Roberto. Originally focused on pine resin production, Jorge transitioned into coffee in the early 2000s after being inspired by the Cup of Excellence program.

Today, he owns and operates four coffee farms and is internationally recognized for his exceptional quality, having won the El Salvador Cup of Excellence three times between 2014 and 2019. Backed by formal training in agricultural science and economics, Jorge has transformed his farms into some of the most respected coffee operations in the region.

The Process

This coffee is produced using a traditional washed process, highlighting clarity and balance in the cup. After harvest, the ripe cherries are carefully depulped to remove the skin, then fermented to break down the remaining mucilage. The coffee is thoroughly washed with clean water before being slowly dried to stabilize moisture levels. This careful, methodical approach results in a clean, vibrant profile that allows the Pacamara variety’s natural sweetness and bright fruit character to shine.

Bright and refreshing in the cup, this coffee offers lively fruit character led by notes of black currant and tart plum. A rich toffee-like sweetness brings balance and depth, creating a smooth, round mouthfeel. The finish is clean and lingering, with a gentle hint of black tea that leaves the cup feeling elegant and refined.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
