Black & White is excited to present Pilhuatepec Washed, a beautifully balanced washed coffee grown in the mountains of Veracruz, Mexico. This approachable single‑origin showcases bright fruit clarity and comforting sweetness — a filter coffee that feels both familiar and rewarding, whether you’re new to Mexican beans or expanding your specialty coffee palate.
The Producer:
This lot represents a collection of coffee cherries from smallholder growers in and around Pilhuatepec, a mountainous region of Veracruz. Rather than a single estate, this washed lot draws on the combined efforts of several producers who deliver ripe cherries to the local wet mill. The result reflects both regional diversity and collective care, bringing together traditional varietals like Bourbon, Typica, and Mundo Novo in one approachable coffee.
The Process:
After being harvested at peak ripeness, cherries are depulped on the same day and undergo a short fermentation (typically 12–18 hours) before being thoroughly washed clean of mucilage. The parchment coffee is then dried on patios or, where needed, in mechanical dryers until it reaches the ideal moisture level (~10–12 %). This classic washed processing produces a clean profile with bright acidity and clear fruit expression, allowing both sweetness and structure to shine.
The Cup:
In the cup, Pilhuatepec Washed is bright, sweet, and smooth. Vibrant red cherry 🍒 fruit carries through the mid‑palate, backed by a milk chocolate 🍫 richness that gives the brew a comforting sweetness. Notes of almond 🌰 add a gentle nuttiness and body, making this coffee balanced and inviting — ideal for filter brewing and easy sipping all day long.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
