About This Coffee and Producer

Finca Juan Martín was founded in 2018 by Banexport S.A. as a model farm to advance sustainable and high-quality coffee production. Nestled in Sotará, Cauca, at 2,050 meters above sea level, the farm’s high elevation, volcanic soils, and cool climate create the ideal conditions for cultivating expressive, vibrant coffees.

This washed Pink Bourbon exemplifies the precision and innovation that define Juan Martín’s approach. After harvest, the cherries are disinfected and sorted into three distinct size classifications. They are then depulped and fermented in a controlled bioreactor, a process designed to highlight the floral, spicy, and fruity nuances that make Pink Bourbon so unique. Once fermentation is complete, the coffee is carefully washed and dried, preserving clarity and structure in the final cup.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
