Intro
This washed Ethiopian from the Rumu Damo Washing Station is a textbook example of why coffees from Ethiopia’s highest elevations continue to set the global standard for clarity and elegance. Juicy, expressive, and beautifully aromatic, this is a coffee that feels both classic and endlessly drinkable.
The Producer
Rumu Damo Washing Station works with local smallholder farmers farming at extreme elevations, around 2300 meters above sea level. At these heights, coffee cherries ripen slowly, developing vibrant acidity and layered aromatics. The station is known for its meticulous attention to sorting, fermentation, and drying—key elements that allow the terroir to shine through in the cup.
The Process
This lot is fully washed, a method that highlights purity and precision. After careful handpicking, cherries are depulped and fermented to remove mucilage before being thoroughly washed. The coffee is then dried slowly on raised beds, ensuring even moisture reduction and preserving the coffee’s bright, citrus-forward character.
In the Cup
The cup opens with bright, zesty lemon, immediately signaling a classic washed Ethiopian profile. This citrus acidity is balanced by juicy nectarine sweetness, giving the coffee both lift and roundness. As it cools, delicate wild floral notes emerge, adding elegance and aromatic complexity. The finish is clean, refreshing, and lingering—everything we love about washed Ethiopians from this region.
A beautifully expressive coffee that showcases clarity, altitude, and origin with confidence.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
