Intro
This natural-processed community lot from Aponte is one of those coffees that immediately earns a spot among DAK's favourites. It’s vibrant yet composed, deeply fruity but never overwhelming—showcasing just how expressive Colombian naturals can be when handled with care and intention.
The Producers
Aponte is home to an indigenous Inga community, where coffee is grown as both a livelihood and a cultural practice. Local producers work collectively, sharing knowledge and experimenting with fermentation styles and cultivars. There’s a strong emphasis here on natural and honey processing, allowing the character of the fruit and the land to shine through in the cup.
The Process
This lot is a natural-processed field blend, meaning ripe cherries from multiple producers are dried whole, allowing sugars and fruit compounds to slowly migrate into the seed. The result is a coffee with enhanced sweetness, silky texture, and layered fruit complexity—while still maintaining balance and clarity.
In the Cup
The cup opens with bright guava and juicy purple fruits, giving a lively, almost jammy impression. As it develops, the texture turns silky and smooth, finishing with a grounding note of soft cacao. It’s fruit-forward yet elegant, with a balance that keeps you coming back for another sip—an excellent example of the potential coming out of Aponte.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
