ABOUT THIS COFFEE

Jenny’s Barrel Coffee is one of The Naughty Dog’s most adventurous projects to date—an exploration into how carefully controlled barrel-aging can enhance, elevate, and transform a coffee’s natural character.

Working together with Kofiem, the roastery sourced a heavily aromatic whiskey barrel from a Czech distiller—one that had originally come from Tennessee, where it spent years aging Jack Daniel’s whiskey. The barrel arrived saturated with deep aromas of vanilla, oak, caramel, and smoke, making it the perfect vessel for experimentation.

Multiple coffees and aging durations were tested, but washed Ethiopian lots stood out immediately. Their clarity, floral backbone, and delicate fruit sweetness paired beautifully with the rich, spirit-forward aromatics of the barrel.

After several days of aging, the flavour balance was perfect:
caramel & chocolate up front
• gentle forest fruit & floral undertones
• a warming, aromatic whiskey-like finish, especially as the cup cools

Despite the sensory illusion, there is no alcohol content—only the captured aromatics from the barrel.

HOW IT TASTES

This coffee offers a layered, spirit-forward cup:
Chocolate and caramel lead the profile, supported by subtle berry-like fruit and soft florals. The finish brings a smooth whiskey afterglow, making this a comforting, cozy, and truly unique Ethiopian washed coffee.

If allowed to cool, the whiskey notes become more pronounced, revealing the full charm of this barrel-aging experiment.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
