This extraordinarily floral Gesha is a shining example of why Sebastián Ramírez is considered one of Colombia’s most exciting producers. Elegant yet expressive, the cup bursts with aromatic florals and tropical fruit, while maintaining a gentle sweetness and clarity that makes it endlessly drinkable. It’s a refined Gesha that balances innovation with precision—vibrant without being overwhelming.
The Producer
Sebastián Ramírez is a fourth-generation coffee producer and the driving force behind El Placer Farms, an experimental and forward-thinking coffee project in Quindío. Beyond producing award-winning coffees, Sebastián is deeply committed to educating and supporting farmers throughout the region, helping elevate both quality and sustainability.
At El Placer, Sebastián grows an impressive range of varieties—including Gesha, Red, Pink & Yellow Bourbon, and Wush Wush—with a strong focus on fermentation science. His work bridges tradition and innovation, making him one of the most influential figures in modern Colombian specialty coffee.
The Process
This Gesha is processed using a White Honey method, paired with Sebastián’s highly controlled fermentation approach. During fermentation, variables such as temperature and pH are carefully monitored. A key component is the use of mosto—a glucose-rich liquid left over from previous anaerobic fermentations—which is added to inoculate the new batch.
This technique encourages a stable and consistent microbial environment, helping create a clean, expressive profile while enhancing sweetness and aromatic complexity. The result is precision-driven processing that highlights both variety and terroir.
In the Cup
The cup opens with intense jasmine florals, immediately setting a classic Gesha tone. Bright pineapple adds a juicy tropical lift, while a subtle herbal honey sweetness rounds everything out. The body is light and silky, the acidity clean and elegant, and the finish long, floral, and gently sweet—an expressive yet beautifully composed Gesha from start to finish.
What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
