Amongst Native’s newest releases spotlights a strikingly aromatic and textural expression of Chiroso, crafted through an oxidative natural process by Colombian producer Clari Bermudez.

THE PRODUCER

Clari Bermudez represents a growing wave of producers in Colombia focused on pushing flavour, precision, and varietal identity to new heights. Her work with Chiroso—a variety known for its lifted florality and crisp acidity—has earned attention for its balance of creativity and restraint.

Through intentional fermentation and careful drying, Clari consistently reveals layers of nuance that give her coffees unmistakable character.

THE PROCESS 

This lot undergoes an oxidative natural process, encouraging a deep development of fruit tones and complexity.

Whole cherries are allowed a controlled oxidative phase before being slowly dried, promoting a vivid combination of ripe sweetness and refined structure.

The method emphasizes both the inherent brightness of Chiroso and a rounder, dessert-like richness brought on by extended fermentation.

THE CUP

A beautifully expressive Chiroso with both lift and depth.
Expect rose petals, green apple crispness, and a silky white-chocolate sweetness, all wrapped in a clean, gently layered finish.

The result is a cup that feels both modern and elegant—floral, sweet, and luminously fresh.

What is the roast recency?

Native recommend brewing with beans that are at least two to three weeks off roast. All beans are roasted to peak flavour at around 6-9 weeks. We have the option to either purchase standard beans (no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

Filter or Espresso? Both!

All of Native's coffees are profiled to be as fantastic in filter as they are in espresso.
