This release highlights a clean yet remarkably expressive take on Colombia’s classic Supremo grade, transformed through Diego Bermudez’s cutting-edge Enzyflow Washed process. Bright, refined, and deeply layered, this lot shows how precision fermentation can elevate a traditional profile into something extraordinary.

THE PRODUCER

Diego Bermudez stands at the forefront of modern coffee processing. From his family’s operation at El Paraíso, he has pioneered a suite of controlled, enzyme-guided fermentation techniques that have reshaped expectations of Colombian coffee.

His approach blends scientific rigor with sensory intention, extracting clarity, sweetness, and structured aromatics from every variety and grade he works with.

With Supremo, a well-loved Colombian size grading known for balance and versatility, Diego brings a new dimension—turning a familiar category into a highly articulate and aromatic experience.

THE PROCESS 

The Enzyflow Washed process applies the same enzymatic precision Diego is known for, but within a washed framework that keeps the cup bright, structured, and pristinely clean.

Cherries are pulped and then guided through carefully measured enzymatic phases, followed by controlled washing and a slow, even drying cycle.

The result is a washed coffee with remarkable depth—clean and citrus-forward, yet enriched with unexpected layers of sweetness and complexity.

THE CUP

A vibrant, energetic cup with citrus brightness, dried fruit sweetness, and lively orange zest.

Underlying notes of cacao nibs add structure and a lightly bittersweet edge, bringing balance to the fruit-driven profile.

Expect a clean finish, a buoyant acidity, and an overall cup that feels crisp, modern, and beautifully calibrated.

What is the roast recency?

Native recommend brewing with beans that are at least two to three weeks off roast. All beans are roasted to peak flavour at around 6-9 weeks. We have the option to either purchase standard beans (no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

Filter or Espresso? Both!

All of Native's coffees are profiled to be as fantastic in filter as they are in espresso.
