/054 Brazil - Yellow Catuai
Set among the rolling hills of Santo Antônio do Amparo in Minas Gerais, Fazenda Guariroba is a family-run farm with a long-standing focus on coffee cultivation. Led by Gabriel Lamounier Vieira and Elisa Paiva Lamounier, the estate covers 250 hectares, with 140 dedicated to coffee.
Guariroba has built a reputation for innovation — particularly through anaerobic fermentation techniques that enhance flavour and deepen complexity. Their pursuit of excellence has earned recognition at the Cup of Excellence, placing them among Brazil’s top-quality producers.
This Yellow Catuaí lot embodies both technical precision and creative processing. The natural anaerobic fermentation adds nuance and character — making this coffee a striking choice for competition stages, but equally compelling in the cup.
Flavour Notes: Juicy & Complex + Root Beer

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
