Fazenda São Domingos sits in the verdant highlands of Mococa, where tradition meets thoughtful innovation. Owned and managed by Marco A. Guardabaxo, the farm blends historic expertise with modern precision. The estate has invested in both wet and dry milling technologies, enabling careful control over every step of production — from harvest to drying — to ensure pristine quality in the cup.

This thoughtful approach allows São Domingos to produce beans that carry Brazil’s hallmark sweetness, yet feel lively, layered, and complete.


THE PROCESS — Pulped Natural Clarity

The /001³ lot is processed as pulped natural, a method that enhances sweetness and body while preserving structural clarity:

🍒 Selective Harvesting — Only ripe cherries are picked at peak maturity.
💧 Depulping Before Drying — Pulp is removed, leaving just enough fruit to contribute sweetness without muddiness.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
