ABOUT THIS COFFEE
From the highlands of Sidama, this lot comes from Elto, processed at the Elora Station, under the meticulous care of Eliyas Dukamo and Atiklit Dejene.
Cultivated at high altitude from 74158 and Peaberry selections, this coffee was processed using a 36-hour anaerobic natural method, where cherries are sealed in low-oxygen tanks to ferment slowly before being sun-dried on raised beds. This careful process deepens sweetness and accentuates the tropical fruit and floral complexity that Sidama is celebrated for.
IN THE CUP
This coffee is vivid, floral, and elegantly fruit-forward. Expect cherry blossom aromatics, red grape juiciness, and mixed berry brightness, all lifted by a refreshing pineapple acidity.
