Brazil Jaguara – Arara (Yellow Catuai x Obatã)
The final Brazil of the season, and another standout Yellow Catuai from our long-time partners at Jaguara.
Produced by Natália Brito and André Luíz Garcia, this lot was selectively hand-picked and processed as an extended-fermentation natural - 80 hours of controlled fermentation followed by careful drying on patios and heated-air boxes.
In the cup, expect a silky, liquory texture with notes of liquorice, cocoa nibs, and pecan.
Jaguara is both the name of their farm and their export project, sourcing coffees from surrounding producers in Campo das Vertentes. André, an agronomist and third-generation grower, and Natália, a cupper and second-generation producer, bring deep expertise and innovation to everything they produce.

Flavour Notes: Liquorice, Cocoa Nibs, Pecan
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
