INTRO
One of the longest harvest seasons ever seen in Urrao has also been one of the most exceptional for quality — this encore delivery from David Berrio came as a wonderful surprise. Peach and melon sweetness lead, with a red tea structure and lovely florality throughout. In the cup: peach, melon, red tea, and florality.
THE PRODUCER
David Berrio's farm, La Casita, is the most remote site worked with in Urrao — at just 1.5 hectares, more a garden than a farm, perched at extreme elevation and consistently producing some of the most dynamic and expressive examples of Chiroso tasted each year. Urrao remains difficult to access, reached in part via an avocado transport plane, with plans to finally visit the farm and its people this year.
Chiroso is a relatively new variety, primarily grown in Antioquia, Colombia, only recently gaining attention for its cup quality potential and beginning to spread. It's been genetically identified as an Ethiopian Landrace, though its precise path to cultivation in this specific region remains unknown — part of an ongoing buying programme developed in partnership with exporter The Coffee Quest.
THE PROCESS
Cherries are hand-picked at peak ripeness, floated to further remove defects, then held in-cherry for 24 hours. They're transported by horse to the main road, then by car to the house and mill, where they're de-pulped and fermented underwater in stainless steel tanks using the cochadas method — coffee added to the tank throughout the week and washed together on Monday. Drying continues until moisture reaches 10.5%.
The cochadas fermentation method, combined with the farm's remote, high-altitude setting, is the defining detail here — it's what builds the dynamic peach, melon, and floral character behind this surprise encore harvest.
