INTRO From the famed Chelbesa washing station in Gedeb, Yirgacheffe — ripe and clean, with strong notes of citrus, stone fruit, and florals. Peach jam and sweet orange lead, with jasmine florality and a limeade brightness throughout. In the cup: peach jam, jasmine, limeade, and sweet orange.
THE PRODUCER Around 1,000 local smallholders, farming between 1,950 and 2,200 masl, deliver cherries to be processed at Chelbesa. Chelbesa is managed by exporting partner SNAP, founded in 2008, which operates seven washing stations across key coffee-growing areas of Ethiopia — Chelbesa consistently among the standout sourced lots each year. The primary varieties grown here are Kurume and Wolisho.
THE PROCESS Cherries are collected at peak ripeness, then floated and sorted before depulping. The seeds undergo dry fermentation for 48-72 hours, are thoroughly rinsed, and moved to drying tables, where they dry on raised beds for 7-10 days.
The 48-72 hour dry fermentation is the defining step — it's what builds the ripe peach jam and jasmine character that define this cup, while keeping the overall profile clean and bright.
