El Escarabajo is a standout processing station from Tolima — a region whose combination of volcanic soils, high elevations, and diverse microclimates has long made it one of Colombia's most compelling origins. This Natural Pink Bourbon delivers a richly layered cup: blackberry and orange up front, transitioning through honey sweetness to a finish of cocoa biscuit.
THE PRODUCER
El Escarabajo was founded in Tolima's Andes Mountains by Jaime and Juan Pablo, whose backgrounds span cultivation, processing, quality control, and international trade. Jaime is a Q Grader and professional barista with hands-on experience running award-winning farms, bringing a refined sensory approach to every lot produced at the station. Juan Pablo's background in political science and market development bridges the farm's production with the global specialty coffee community, positioning El Escarabajo as a deliberate and internationally-minded operation.
Tolima itself sits in the heart of the Colombian Andes, where elevations between 1,200 and 2,000 MASL slow cherry development and encourage the accumulation of sugars and complex aromatic compounds. El Escarabajo, at 1,750 MASL, sits firmly within this band — conditions well-suited to a variety as expressive as Pink Bourbon.
THE PROCESS
The Natural process at El Escarabajo involves:
🍒 Hand-picking — Cherries selected at peak ripeness ☀️ Whole-cherry drying — Fruit dried intact on raised beds, allowing sugars and pulp to influence the developing seed throughout
