INTRO
Elto Coffee was founded by Eliyas Dukamo and Atiklit Dejene — "Elto," in the local language, means "beyond passion" and "abundance," reflecting their dedication to specialty coffee. This lot from their Elora Station, established in 2017 in Abegona Village, delivers pineapple, blueberry, and raspberry, with a bright fruit character and a juicy berry finish. In the cup: pineapple, blueberry, and raspberry.
THE PRODUCER
Elto Coffee sources ripe cherries from surrounding smallholder farmers near their Elora Station in Abegona Village, Sidamo — one of the couple's dedicated processing sites focused on exclusive experimental nano-lots.
THE PROCESS
Ripe cherries were floated, followed by 96 hours of anaerobic fermentation. They were then transferred to African raised beds and dried in 3-5cm layers, with regular turning to ensure even drying.
The 96-hour anaerobic fermentation is the defining step — it's what builds the vivid pineapple and blueberry character behind this cup, with a juicy raspberry finish.
