DETAILS

  • Project: Hachi Panama
  • Country: Panama
  • Varietal: Gesha
  • Process: Oxidative Natural

INTRO
A Gesha from Hachi Panama, named AME (飴), "candy" in Japanese. Dark cherry syrup sweetness meets a tart hibiscus floral, with a bright kumquat citrus lift. In the cup: dark cherry syrup, hibiscus, and kumquat.

THE PRODUCER
This lot comes from the Hachi Panama project, the same project behind the earlier Kohaku Caturra. The sheet doesn't name a farm, region, or altitude.

THE PROCESS
This lot is an Oxidative Natural: processed as a natural, with cherries dried whole so the fruit's sugars pass into the bean. The oxidative element is part of what the sheet labels the process, though no further steps are given.

THE CUP
Sweet and aromatic: dark cherry syrup richness, lifted by hibiscus and a bright kumquat finish.

About this variety

Coffees reported as Gesha or Geisha are often prized for a delicate, tea-like cup with lifted floral aromas and bright fruit. Jasmine, bergamot and peach are common reference points, but each lot can express them differently.

Why this one is different
  • Panama
  • Chiriquí
  • Natural

Panamanian Geisha, especially well-traced T2722 grown at high altitude, is the classic reference for a very delicate, jasmine-led and peach-like cup.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

Why the Gesha / Geisha name matters

Gesha and Geisha are interchangeable spellings, not proof of different varieties. The best-documented Panamanian Geisha descends from Ethiopian material recorded as T2722, while other coffees carrying either spelling may not be genetically identical.

Classification Reported Gesha / Geisha

Technical lineage The reported name alone does not establish one genetic lineage. Confirmed Panamanian T2722 traces to Ethiopian landrace material.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
