From Stiven Hoyos — at 22, one of the youngest members of the Monkaaba collective and part of a four-generation coffee family in San Agustín. A sparkling, floral washed Pink Bourbon of real vibrancy and elegance. In the cup: red cordial, fresh berries, and green apple, with a syrupy aftertaste that stays clean and bright long into the finish.
THE PRODUCER
Stiven Hoyos is the latest chapter in a coffee family story stretching back four generations in San Agustín, Huila — inspired by his father Rodrigo, who spent decades building the family farm. Stiven grew up helping with production while attending school, developing both the knowledge and the connection to the land that now drives everything he does. When an unsuccessful university entrance exam threatened to alter his path, Rodrigo responded by giving Stiven a section of the farm to manage himself. He planted 800 Red Caturra trees and brought them successfully into production — an achievement that deepened his commitment to coffee farming and set the course for his future.
Today, at 22, Stiven is among the youngest members of the Monkaaba collective — a group of mostly under-35 producers in San Agustín working together to prove that specialty coffee farming is a viable and meaningful future for young Colombians. For Stiven, the attention that international buyers and coffee professionals bring to his work is a powerful affirmation that the effort behind each harvest is recognised far beyond Colombia's borders.
Pink Bourbon is a variety grown primarily in Huila, genetically identified as Ethiopian Landrace and belonging to the Core Ethiopia group alongside Gesha, Chiroso, Sidra, and Aji. At 1,850–1,950 MASL in San Agustín's cool mountain microclimate, its characteristic vivid fruit character and bright sparkling acidity find ideal conditions to express themselves with the clarity and elegance that define this lot.
THE PROCESS
The Washed process involves:
🍒 Hand-picking — Pink Bourbon cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content
The meticulous washing and fermentation management is the defining step — by stripping back all fruit influence and fermenting cleanly, Stiven allows the Pink Bourbon's intrinsic red cordial sweetness, green apple brightness, and floral character to express themselves with the sparkling clarity and syrupy finish that define this lot.
