INTRO
The partner lot to Rio Dulce, from the same producer, estate, and variety but a different plot and processing. Entre Montañas is a Green-tip Gesha planting that was oxydator washed, offering a brilliant display of sparkling acidity, heavy rose-like florals, and an intriguing amaro finishing note. It is more expressive and decadent than its partner lot. In the cup: cotton candy grape, rose, and Cardamaro.
THE PRODUCER
José Giraldo produces this Gesha at the Las Marías estate in Pijao, Quindío, from the Entre Montañas plot. The page gives no further producer background.
THE PROCESS
This lot is Oxydator Washed. The roaster rates it Funk Level 2 ("unnatural funk"), reflecting the effect of the process: a sparkling, champagne-like acidity. The page doesn't give further steps.
The oxydator wash is the defining feature. It's what produces the sparkling acidity and the playful grape and amaro character.
THE CUP
Sparkling and decadent: cotton candy grape and rose florals lead, with a Cardamaro finish. Cardamaro is a wine-based amaro, winey, herbaceous, and dried fruit in character, and light on the palate. The acidity is deep, phosphoric, and sparkling, the sweetness velvety and jammy, and the finish a long, lingering floral.
