INTRO
SEY's first year working with Duber Mejia's coffees, and a remarkable one: he has produced some of their top-scoring lots from Urrao, and this final surprise delivery was a welcome one. In the cup: tropical fruit, soft florals, and sparkling acidity.
THE PRODUCER
This is a continuation of SEY's ongoing Urrao project. Their understanding of Colombian coffee shifted when they tasted their first Chiroso from this part of Antioquia: Urrao wasn't known for high-quality coffee, and most of what it produced moved into bulk commodity lots, so the quality was entirely unexpected. They continue to invest in the region and work with their exporting partner, The Coffee Quest, to develop the buying programme.
Chiroso is a new variety grown mainly in Antioquia, genetically identified as an Ethiopian landrace; where and how it came to be cultivated in Urrao remains unknown, but its cup quality is extraordinary.
THE PROCESS
The Washed process for this lot involves:
🍒 Hand-picking — cherries harvested at peak ripeness
💧 Floating — floated to further remove defects
🌙 In-cherry hold — held in-cherry overnight
🌱 De-pulping — cherries de-pulped
⏱️ Dry fermentation — dry-fermented for 36 hours
🚿 Washing — washed clean after fermentation
☀️ Raised-bed drying — dried on raised beds until moisture reaches 10.5%
THE CUP
Bright and aromatic: tropical fruit leads, with soft florals and a sparkling acidity.
