INTRO
SEISO (清楚) translates to pure, neat, and graceful—a fitting name for this exceptionally clean and expressive Gesha from the iconic Bermudez family. As part of the EXOTICS series, this release celebrates clarity, elegance, and the refined aromatics that only Gesha can produce. Expect a cup that is delicate yet vividly defined, weaving bright citrus, soft florals, and a velvety sweetness into a harmonious whole.
THE PRODUCER
Diego Bermudez of El Paraiso is recognized globally as one of the most innovative minds in coffee processing. While his name is often associated with high-intervention techniques and groundbreaking fermentation protocols, Diego is equally capable of producing immaculate washed coffees that highlight variety and terroir with precision.
For the SEISO lot, Diego turns his attention away from experimental fermentations and instead channels his obsessive attention to detail into producing a washed Gesha of extraordinary purity. The result is a coffee that stands out not through intensity, but through balance, clarity, and composure.
THE PROCESS
This Gesha undergoes a meticulously controlled washed process, where every step is monitored for consistency and cleanliness.
-
Selective harvesting at peak ripeness
-
Careful depulping to preserve delicate aromatics
-
Washed fermentation under controlled conditions to ensure clarity
-
Slow, even drying to lock in floral and citrus-forward complexity
The result is a washed profile that is crystal clean, emphasizing elegance over fermentation-driven enhancement—an ideal format for showcasing the inherent beauty of Gesha.
THE CUP
In the cup, SEISO lives up to its name: composed, graceful, and luminously clean.
-
Floral aromatics open the experience, soft and refined.
-
Lemon and lemongrass bring a precise, citric lift that feels fresh and elegant rather than sharp.
-
A gentle caramel sweetness grounds the profile, adding warmth and balance to the otherwise airy structure.
The finish is long, silky, and tea-like—everything you want from a pristine washed Gesha.
What is the roast recency?
Native recommend brewing with beans that are at least two to three weeks off roast. All beans are roasted to peak flavour at around 6-9 weeks. We have the option to either purchase standard beans (no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
Filter or Espresso? Both!
All of Native's coffees are profiled to be as fantastic in filter as they are in espresso.
