This lot comes from Finca Las Flores in Acevedo, Huila, operated by renowned producer Jhoan Vergara. His farm sits at 1,750 masl on steep mountain slopes where cool nights and warm days help develop dense, flavor-packed cherries.

Jhoan is known for his meticulous approach—from selective hand-picking to precise fermentation control—and this attention to detail is unmistakable in the cup.

PROCESS — EXPERIMENTAL ANAEROBIC + THERMAL SHOCK

This coffee undergoes an advanced, high-precision processing protocol designed to maximize sweetness and enhance fruit character:

  1. Anaerobic Fermentation — Whole cherries ferment in sealed tanks without oxygen, allowing complex fruity esters to develop.

  2. Thermal Shock — Sudden temperature changes amplify aromatic volatility, helping bright candy-like citrus tones emerge.

  3. Washing & Drying — The coffee is washed clean and dried carefully to preserve clarity, stability, and sweetness.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
