With a washed profile that is clean and elegant, this coffee brings forth vibrant citrus liveliness and delicate floral character — a standout choice for filter brews that reveal nuance and complexity.
The Producer:This coffee comes from Finca El Paraiso, where producer Alex Bermudez carefully tends his trees high in the mountains of Cauca. Sudan Rume is a particularly rare varietal with an heirloom lineage, and the harvest from El Paraiso is both limited and highly valued. September sources this lot through a trusted connection with coffee expert Eyder Martinez, ensuring traceability and insight into growing conditions and processing decisions that bring out the best qualities of this unique varietal.
The Process:After selective hand‑picking of ripe cherries, this lot undergoes a double fermentation to develop depth of flavour. First, cherries ferment in their whole‑fruit state for 24 hours. Then, after depulping, a secondary fermentation in tanks with added natural mucilage carries on for roughly 48 hours, enhancing sweetness and complexity before the beans are traditionally washed and dried. This process strikes a balance between clarity and layered fruit expression, tailored to Sudan Rume’s delicate nature.
