Intro
This is our third time featuring coffee from Jorge Rojas, and the first time releasing one of his Pink Bourbon lots. It’s an expressive, juicy coffee that immediately stands out on the cupping table and continues to unfold long after the final sip. Bright, playful, and well-balanced, this lot highlights both Jorge’s careful processing and the vibrant potential of Pink Bourbon from Tolima.
The Producer
Jorge Rojas is a fourth-generation coffee producer, deeply rooted in his family’s farming tradition. His journey in coffee began at just 13 years old, when his mother gave him the opportunity to work on the family farm. There, he learned every step of production—from cultivation and harvesting to bagging and logistics.
Eager to expand his knowledge, Jorge also worked as a bag handler at a local coffee association, gaining hands-on experience with post-harvest handling and quality control. In 2016, he was introduced to the world of specialty coffee, a turning point that sparked his curiosity for experimentation and quality-driven processing. Since then, Jorge has focused on refining fermentation techniques to elevate the expression of his coffees year after year.
The Process
Jorge’s approach to processing begins with extremely strict cherry selection during harvest. Only fully ripe cherries are chosen for this lot. The cherries are then fermented in a sealed, oxygen-free tank, allowing specific microbes to interact with the coffee’s natural sugars and acids in a controlled environment.
After fermentation, the coffee is pulped and washed, then dried slowly under close supervision. This anaerobic washed method enhances fruit clarity and sweetness while preserving structure and balance in the cup.
In the Cup
The cup is juicy, bright, and inviting from the first sip. Notes of blackberry lead the way, followed by a playful candy-like sweetness reminiscent of Jolly Ranchers. As it cools, ripe cherry emerges, adding depth and cohesion. The body is light and silky, the acidity lively but rounded, and the finish clean and sweet—making this a coffee that’s both fun and refined, with excellent drinkability and lasting appeal.
What is the roast recency?
September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
