INTRO

Chiroso was, for many years, found only in Urrao — much farther north than Huila — but some southern producers have recently begun cultivating this unique variety. This is the second separation from William Ortiz and an exemplary expression of that effort. In the cup we find a stone fruit–forward profile of peach, lemon zest, and wildflower honey.


THE PRODUCER

William Ortiz represents the third generation of his family to farm coffee at La Cabaña in Pitalito, Huila. The farm has been shaped by a lineage of dedicated growers, beginning with his grandfather and passed through his father Libardo before reaching William, who has embraced both tradition and innovation with equal enthusiasm. He currently grows Caturra, Pink Bourbon, and Chiroso — and this season SEY purchased both his Pink Bourbon and Chiroso separations.

Producing an exceptional lot once is challenging; doing so consecutively is rarer still. This second delivery from William confirms that his first was no aberration. SEY look forward to visiting La Cabaña on their next trip to Huila.


THE PROCESS

The Washed process at La Cabaña involves:

  • 🍒 Selective Harvest — Hand-picked at peak ripeness
  • 💧 Float Sort — Floated to further remove defects
  • 📅 In-Cherry Rest — Held in cherry overnight
  • 🔧 Depulping — De-pulped the following day
  • 🧪 Dry Fermentation — Fermented dry for 36 hours
  • 💧 Washing — Washed after fermentation
  • ☀️ Raised Bed Drying — Dried on raised beds until moisture content reaches 10.5%

The 36-hour dry fermentation, combined with careful raised-bed drying, coaxes the Chiroso variety's characteristic stone fruit brightness and aromatic complexity into full expression.


THE CUP

A stone fruit–forward, aromatic cup that showcases Chiroso at its most expressive. Grown in the emerging southern Huila frontier for this variety, William Ortiz's La Cabaña delivers a profile of remarkable clarity and sweetness.
