INTRO

This is the final harvest pass of the season from Octavio Rueda — and SEY consider it the most intense and dynamic expression of his work this year. Having tracked the evolution of each pass throughout the season, this closing lot stands apart: deeper, more complex, with a striking profile that rewards attention. In the cup we find blueberry, hibiscus, and pink lemonade.


THE PRODUCER

Octavio Rueda is a third-generation coffee farmer whose family has worked the land at El Mirador in Palestina, Huila for generations. The farm sits at 1,830 MASL, with around 30,000 coffee trees under cultivation including Pink Bourbon, Red Bourbon, and Castillo. Coffee farming is deeply woven into the fabric of the Rueda family — Octavio's sons assist with cultivation and harvest, whilst his eldest daughter has pursued a career as a coffee roaster and cupper.

SEY first encountered Octavio's coffee on a cupping table and have since counted him among their most valued Colombian producers. Few producers consistently achieve this level of quality across multiple harvest passes in a single season — a testament to Octavio's skill and the exceptional potential of El Mirador.


THE PROCESS

The Washed process at El Mirador involves:

  • 🍒 Selective Harvest — Hand-picked at peak ripeness
  • 💧 Float Sort — Floated to further remove defects
  • 📅 In-Cherry Rest — Held in cherry overnight
  • 🔧 Depulping — De-pulped the following morning
  • 🧪 Underwater Fermentation — Submerged fermentation for 80 hours
  • 💧 Washing — Washed after fermentation
  • ☀️ Raised Bed Drying — Dried on raised beds until moisture content reaches 10.5%

The extended 80-hour underwater fermentation is central to the profile of these coffees — contributing to the complexity and intensity that has made Octavio's Pink Bourbon some of the most sought-after in Huila.
