INTRO
Made together with SNAP by requesting only cherry grown above 2,450 meters, a separation SNAP calls the Highest Elevation Project. Ripe peach and melon lead, with a honeysuckle finish. In the cup: ripe peach, melon, and honeysuckle.

THE PRODUCER
SEY has worked with SNAP for many years, and each year asks how to produce and release better coffee. This year they began looking at specific sites and separating only the cherry delivered from the highest-elevation plants. Chorso Bule was the first site SNAP recommended for this approach, and SEY hopes it marks the beginning of a longer project.

Ethiopia is widely acknowledged as where coffee originated, with DNA testing confirming over 60 distinct varieties, the most coffee biodiversity of any region in the world. Given the tradition of coffee production and the workings of the Ethiopian coffee trade, single-variety lots are virtually impossible to source, so most Ethiopian coffees are blends of the many varieties, referred to simply as "Ethiopian Landrace."

THE PROCESS
The Washed process for this lot involves:

🍒 Hand-picking — cherries harvested at peak ripeness
💧 Floating — floated to further remove defects
🌙 In-cherry hold — held in-cherry for 24 hours
🌱 De-pulping and density grading — de-pulped, then Grade 1 density separated
⏱️ Dry fermentation — dry-fermented for 24 hours
💦 Wet fermentation — wet-fermented, but not submerged, for an additional 12 hours
☀️ Raised-bed drying — dried on raised beds for 10–14 days

THE CUP
Sweet and aromatic: ripe peach and melon lead, with a honeysuckle finish. A promising first look at what the highest-elevation cherry from Gedeb can do.
