Juan Pinto grows Catuai at 1,700 MASL in Peru — one of South America's most rapidly developing specialty coffee origins, where high-altitude Andean growing conditions, volcanic soils, and a stable climate provide ideal conditions for clean, well-balanced cup profiles. Catuai, a natural cross of Mundo Novo and Caturra developed in Brazil, is well established across Peru's highland coffee regions for its reliability, disease resistance, and its ability to consistently deliver sweet, approachable cup profiles under careful washed processing.

THE PROCESS

The Washed process involves:

🍒 Hand-picking — Catuai cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content
