INTRO

From Juan Pinto in Peru — a washed Catuai of clean, comforting character grown at 1,700 MASL. Crisp and balanced, with the natural sweetness and gentle complexity that this variety consistently delivers at altitude. In the cup: green apple, milk chocolate, and chamomile.

THE PRODUCER

Juan Pinto grows Catuai at 1,700 MASL in Peru — one of South America's most rapidly developing specialty coffee origins, where high-altitude Andean growing conditions, volcanic soils, and a stable climate provide ideal conditions for clean, well-balanced cup profiles. Catuai, a natural cross of Mundo Novo and Caturra developed in Brazil, is well established across Peru's highland coffee regions for its reliability, disease resistance, and its ability to consistently deliver sweet, approachable cup profiles under careful washed processing.

THE PROCESS

The Washed process involves:

🍒 Hand-picking — Catuai cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content

The meticulous washed processing is the defining step — stripping back all fruit influence to allow the Catuai's inherent crisp apple acidity, gentle chocolate warmth, and delicate chamomile character to express themselves with the clean, balanced clarity that defines this lot.

THE CUP

A crisp, clean, and comforting washed Catuai from a dedicated Peruvian smallholder — green apple brightness, milk chocolate warmth, and a delicate chamomile florality in a balanced, approachable cup with a smooth, easy-drinking character.

About this variety

Catuaí is usually an approachable, balanced variety rather than an extreme one. Expect gentle fruit, sweetness and a rounded finish, with the origin and process doing much of the detailed flavour work.

Why this one is different
  • Peru
  • 1700 masl
  • Washed

This Peruvian Catuaí is clean, fragrant and softly juicy, with white flowers, cantaloupe, peach and crisp apple. Ebert Huaman's anaerobic-washed process builds sweetness and ripe fruit while retaining the clarity expected from a washed coffee. The process and producer notes are the best guide to this particular bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

The reviewed coffee comes from Finca Artemira in Cajamarca, close to 1,900 metres above sea level. Its high elevation and carefully controlled fermentation make it a useful Peruvian example, while the single-lot evidence keeps the description specific to the farm.

Identification note Only one verified current Peruvian Catuaí supports this context. Its melon, peach and floral character belongs to Ebert Huaman's high-grown anaerobic-washed lot rather than every Catuaí produced in Peru.

Classification Brazilian cultivar

Technical lineage Catuaí was developed in Brazil from Mundo Novo and Caturra. Multiple red- and yellow-fruited selections exist, and individual lines vary between farms and countries.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
