INTRO
Richer than many expect, this Chambakú Decaf shows very balanced, sweet notes of 80% chocolate and muscovado sugar. It has very soft acidity, a very round body, and is very easy to drink with milk, with a slight golden apple aftertaste that should please even demanding coffee drinkers. In the cup: 80% chocolate, muscovado sugar, and golden apple.
THE PRODUCER
Finca Chambakú is one of the farms Nomad works with every year, and Felipe Restrepo brings the new harvest of his Decaf Chambakú. He explains that the whole process used for this coffee has been reworked. They wanted to improve the moisture parameters, so they decided to re-dry the coffee in mechanical silos, which has given the coffee greater stability, a longer shelf life, and a more expressive cup.
THE PROCESS
The coffee is washed, then decaffeinated using high-mountain spring water and ethyl acetate extracted from sugarcane molasses, a selective solvent for caffeine that occurs naturally in nature (including in yellow fruits like banana). The process guarantees a minimum of 97% caffeine extraction and a maximum solvent residual of 20 ppm, with moisture at 11%.
The re-drying in mechanical silos is the defining refinement for this lot. It's what improved the moisture parameters, building the stability and more expressive cup behind the chocolate and muscovado sweetness.
THE CUP
Balanced and sweet: 80% chocolate and muscovado sugar lead, with very soft acidity and a very round body, finishing on a slight golden apple aftertaste. Particularly easy to drink with milk.
