INTRO
The first washed Ethiopian of the season is always the one DAK look forward to most — and Fluffy Petals is this year's. A lot tasted and chosen themselves at Lalesa Washing Station in Gedeb: purple florals, citrus, baked peach, and a subtle thread of hops. It tastes like the season it arrived in.
THE PROCESS
Cherries are collected and hand-sorted before being pulped using a traditional Agaarde Disc Pulper, which also grades the coffee by density at the point of pulping. The coffee is then fermented submerged in water for an average of 72 hours, before being graded again in channels — lower-density fruit floats and is removed, leaving the denser, higher-quality parchment to be separated as a distinct lot. After a final soak in clean water, the parchment is dried on raised beds for 8–20 days in layers of 2–8 cm, adjusted for climate and drying stage.
