INTRO

From Paola and Carlos Trujillo's Finca Patio Bonito in Cauca — a fresh, precise, and cleanly structured washed Aji Bourbon from a region known for its high altitude, cooler nights, and the distinctive acidity they impart. Light, bright, and readable from the first sip to the last. In the cup: sweet lemon and redcurrant brightness, caramel candy sweetness, and an elegant Assam black tea finish.

THE PRODUCER

Paola and Carlos Trujillo have worked at Finca Patio Bonito with a consistent emphasis on quality, detail, and respect for the local terroir. The Cauca region is celebrated for its high altitudes, stable climate, and cooler nights — conditions that slow cherry maturation and give coffees from this area their characteristic clean acidity and refined aromatic profile. Aji Bourbon trees growing at 1,700 MASL ripen slowly and build a natural complexity and sweetness that the clean washed process is ideally suited to revealing. The 2025 summer harvest delivers a fresh and energetic crop with all the clarity and Colombian elegance the farm is known for.

Aji Bourbon is a variety grown primarily in Huila and Cauca — colloquially referred to as "Bourbon Aji" though genetic testing confirms no relation to Bourbon. It is 100% Ethiopian Landrace, belonging to the Core Ethiopia group of varieties alongside Chiroso, Sidra, Gesha, and Pink Bourbon. Its potential for vivid, botanically expressive cup profiles is increasingly well documented, and this clean washed expression from Patio Bonito showcases the variety's inherent brightness and fruit-forward character with exceptional clarity.

THE PROCESS

The Washed process at Finca Patio Bonito involves:

🍒 Hand-picking — Aji Bourbon cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 Controlled fermentation — Beans fermented under controlled conditions to develop structure and complexity 💧 Washing — Thoroughly washed to remove all residue and ensure maximum cup clarity ☀️ Drying — Dried slowly to stabilise the profile and preserve balance

The thorough washing and controlled fermentation are the defining steps — by removing all fruit influence with precision, the process reveals the intrinsic character of the Aji Bourbon and the distinct terroir of Cauca in its purest form, producing the clean, tea-like elegance and bright citrus acidity that define this lot.

THE CUP

A fresh, light, and beautifully structured washed Aji Bourbon from one of Cauca's most quality-focused farms — redcurrant and lemon brightness up front, caramel candy sweetness running through the middle, and a long, elegant Assam black tea finish. A filter coffee that is refreshing, refined, and full of Colombian character.

About this variety

Often vivid and aromatic, with citrus, red fruit, floral or tea-like notes and a sweet finish. Roaster descriptions range from orange blossom and golden kiwi to redcurrant, grape, cocoa and caramel, so processing and producer choices remain important.

Why this one is different
  • Colombia
  • Cauca
  • 1700 masl
  • Washed

Colombian Aji can show bright citrus, florals and red fruit alongside tea, cocoa or caramel sweetness. Roaster descriptions vary from clean washed expressions to fruitier natural processing, so the individual coffee's tasting notes are the best guide to intensity.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Aji is currently associated especially with Huila, Colombia, where the name was adopted locally and the cultivar is still being documented.

Identification note Aji is still being documented and should not be presented as a Bourbon variety despite the common Bourbon Aji name.

Classification Reported Ethiopian landrace-related cultivar

Technical lineage Reviewed genetic reporting places Aji with Ethiopian landrace-related material rather than Bourbon.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
