Roaster notes

Monarch sits as an expressive dark roast. It is a more developed roast of Ethiopia and Colombian coffees. Think of Monarch as the darker side to Southern Weather or Geometry, less acidity but more caramel, bitter chocolate, a little molasses.

Monarch is the ideal roast for those who drink milk based drinks, it sits a fantastic base for a flat white, or cappuccino. In filter, expect a little more bite and body.

What is the roast recency?

Onyx recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

How it works The fruit is removed from the coffee seed. Water and fermentation then help clear away the sticky layer before the seed is dried.

Typical influence Washed coffees are often described as clean and bright, with clear flavours, lively acidity and a crisp finish.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Colombia, Ethiopia
  • Washed

In Colombia, Ethiopia, local selection, replanting and farm history can shape a mixed population over many generations.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
