Poktan Rahayu Tani is an Indonesian producer group — "poktan" being a common abbreviation for a farmers group in Indonesia — cultivating Catimor and Typica across one of the country's diverse growing regions. Indonesia is one of the world's most significant coffee-producing countries, with a long history of Arabica cultivation across its volcanic islands. While Indonesian coffees are most commonly associated with earthy, full-bodied wet-hulled profiles, naturally processed lots from producer groups like Poktan Rahayu Tani demonstrate the extraordinary range and vivid fruit expressiveness the origin can achieve under careful whole-cherry drying — a very different and increasingly celebrated side of Indonesian specialty coffee.
Catimor — a hybrid of Timor Hybrid and Caturra developed for disease resistance and productivity — and Typica, one of the oldest and most historically significant Arabica varieties in the world, together provide the structural base that the natural process builds on so expressively in this lot.
THE PROCESS
The Natural process involves:
🍒 Hand-picking — Catimor and Typica cherries selectively harvested at peak ripeness 🔍 Sorting — Carefully sorted before drying ☀️ Raised-bed drying — Whole cherries dried on raised beds, allowing natural sugars and aromatic compounds to integrate fully into the bean throughout the drying period
The whole-fruit natural drying is the defining step — by leaving the cherry intact throughout, the process allows the natural sugars to develop the grape soda effervescence, guava tropical sweetness, hibiscus florality, and tropical depth that make this lot such a vivid and unexpected expression of Indonesian specialty coffee.
