INTRO
Manuel Burac's Gesha from Horqueta in Boquete, processed by the Lost Origin lab. In the cup: raspberry tea, guava, candied grape, and strawberry.
THE PRODUCER
Manuel Burac grows this Gesha on his farm in Horqueta, a sector of Boquete northeast of the town on the road toward Alto Quiel. The lot was picked at 1,600 metres on 10 March 2026. The cherries were then processed by Lost Origin, which works from a facility above the Casa Bruja brewery in Panama City. Franz founded the lab in January 2023 to bring the controlled fermentation of brewing to Panamanian coffee, and in its first year the lab produced the coffee that won the 2024 World Brewers Cup.
Gesha is an Ethiopian landrace, gathered from the forests near Gesha in southwestern Ethiopia in the 1930s, and prized for its aromatics: jasmine, bergamot, and stone fruit are among its most familiar notes. The tree grows tall and open with long, delicate branches, usually producing its first crop in its third or fourth year, and has intermediate resistance to leaf rust. World Coffee Research rates its quality potential highest at elevation, with florals coming through most clearly above 1,300 metres in Central America.
THE PROCESS
In a natural, the coffee ferments and dries inside the whole cherry. The Natural process for this lot involves:
🍒 Custom tanks — cherries fermented in custom-built stainless steel tanks
🧫 Selected cultures — guided by two of the lab's cultures, coded LOY-007 and LOB-002
🌡️ Five-day fermentation — at an average of 21°C
🏠 Climate-controlled drying — 28 days in rooms where temperature and humidity are held steady
Choosing the culture and then controlling every condition around it is the intention of the method. It shows in a cup that is ripe and clean throughout.
THE CUP
Raspberry tea opens the cup, bright and lightly tart, with ripe guava filling the middle in a soft tropical sweetness. Candied grape and strawberry carry into a sweet, jammy finish that grows rounder as the cup cools. The body is light but coating, and the sweetness lingers well after the last sip.
