INTRO
A loud, fruit-forward natural from the hills of Tolima. Purple grape and cherry ripe lead the charge, Jaffa orange runs through the middle, and passionfruit lifts the finish — jammy, syrupy, and completely unapologetic about it.
THE PRODUCER
El Indio is a community of smallholder farms in Colombia's Tolima region, sitting high enough for cherries to develop slowly and ripen properly. Cofinet, the import partner behind this lot, work directly with El Indio to keep individual lots distinct and ensure producers are properly rewarded for their work. Cherries are picked at peak ripeness and sun-dried slowly on raised beds, delivering the syrupy, fruit-saturated character that defines this coffee.
THE PROCESS
Natural process. Ripe cherries are sun-dried whole on raised beds, allowing the fruit to slowly ferment around the seed and drive the deep, jammy sweetness that defines this lot.
