INTRO
A natural Chiroso from high in the Cauca highlands that delivers exactly what the name promises. Stewed apples lead with warming, dessert-like sweetness, passionfruit lifts the middle, and a creamy biscuit-and-yoghurt finish ties everything together. Comforting and complex in equal measure.
THE PRODUCER
Cesar Buesaquillo farms Chiroso in the mountains of Inzá, Cauca — one of Colombia's most elevated and underexplored growing regions. At up to 2,100 MASL, the altitude slows cherry development considerably, concentrating sugars and building the depth that Chiroso is increasingly celebrated for. Cherries are picked at peak ripeness — glossy and dark — then sun-dried slowly on raised beds, locking in the syrupy fruit sweetness that defines this lot. Cofinet work directly with Cesar to keep the lot traceable and the farm fairly rewarded.
THE PROCESS
Natural process. Ripe cherries are sun-dried whole on raised beds, allowing the fruit to slowly break down around the seed and drive the warm, baked-fruit sweetness that defines this coffee.

A coffee that earns its name — warm, sweet, and deeply satisfying, with just enough passionfruit brightness to keep it from ever feeling heavy. One of the most immediately loveable naturals we've come across.
