INTRO The last harvest pass from David Berrio's small garden of Chiroso — an exceptional year, with lots ranking among the highest-scoring from Urrao all season. Ripe stone fruit and star fruit lead, with a yellow floral lift running throughout. In the cup: ripe stone fruit, yellow florals, and star fruit.
THE PRODUCER David Berrio's farm, La Casita, is the most remote site in the Urrao buying programme — at just 1.5 hectares, more a garden than a farm, perched at extreme elevation. It consistently produces some of the most dynamic and expressive examples of Chiroso in the lineup. Urrao remains difficult to access, reached in part via an avocado transport plane, with plans to finally visit the farm and its people this year.
Chiroso is a relatively new variety, primarily grown in Antioquia, only recently gaining attention for its cup quality potential and beginning to spread. It's been genetically identified as an Ethiopian Landrace, though its precise path to cultivation in this specific region remains unknown — part of an ongoing project developed in partnership with exporter The Coffee Quest.
THE PROCESS Cherries are hand-picked at peak ripeness, floated to remove defects, then held in-cherry for 24 hours. They're transported by horse to the main road, then by car to the house and mill, where they're de-pulped and fermented underwater in stainless steel tanks using the cochadas method — coffee added to the tank throughout the week and washed together on Monday. Drying continues until moisture reaches 10.5%.
The cochadas fermentation method, combined with the farm's remote, high-altitude setting, is the defining detail here — it's what builds the dynamic ripe stone fruit and star fruit character that define this final-pass cup.
THE CUP Dynamic and expressive — ripe stone fruit sweetness up front, yellow florals woven through, and a bright star fruit finish. A fitting close to an exceptional season for one of Urrao's most remote gardens.
