INTRO
A vibrant Castillo Natural EF2 from Diafanor Ruiz at La Divisa. Juicy, wine-like acidity carries layered ripe tropical fruit and dark berry, all resting on a syrupy, full body. Bold and expressive, a striking showcase of extended fermentation and Quindío's terroir. In the cup: macerated strawberry, mango, brown sugar, and a hint of tamarind.
THE PRODUCER
La Divisa is a farm in Quindío managed by Diafanor Ruiz. The region's cool mountain climate allows slow, even ripening of the fruit, developing the sweetness and structure behind exceptional quality. The lot is Castillo, a variety developed in Colombia for resistance to coffee leaf rust while keeping cup quality. The result reflects both the character of Quindío's terroir and Diafanor's careful, experimental approach to processing.
THE PROCESS
This lot is processed as a Natural EF2: a controlled anaerobic fermentation in sealed tanks, after which the fruit is laid out to dry whole. The extended fermentation stage lets Diafanor draw out heightened sweetness and a fuller body, while the natural drying layers in the fruit-forward complexity that whole-fruit processing is known for.
The controlled anaerobic extended fermentation in sealed tanks is the defining step. It's what builds the syrupy body and wine-like fruit intensity.
THE CUP
Bold and expressive: juicy, wine-like acidity carries macerated strawberry and mango over brown sugar and a hint of tamarind, with a syrupy, full body.
