INTRO Wilder Lazo of La Dinastía returns with a new expression of a longtime favourite — a Yellow Honey Gesha that carries an unexpected lemongrass character, picked up from shared processing equipment rather than direct infusion. Dried apricot and tangerine open bright and sparkling, with jasmine and lemongrass lifting the aromatics on top. In the cup: lemongrass, dried apricot, tangerine, and jasmine.
THE PRODUCER Wilder Lazo is, by training, a veterinarian specialising in livestock farming. When coffee prices declined in 2016 and his father fell seriously ill, he and his brother took on the family farm, determined to bring it into the modern era. Early lots scored only 80-83 points despite elaborate processing, so Wilder turned to soil science — examining samples and using targeted nutrients and fertilisers to correct pH and improve nutrient availability, an approach he calls precision agriculture.
La Dinastía is also where Wilder planted his first Geisha trees, sourcing seed from Colombian and Panamanian farms and friends in Costa Rica. He planted them together and purified the genetics over time, removing trees that didn't match his preferred flavour profile or that underperformed.
THE PROCESS For this Yellow Honey lot, ripe cherries were floated to remove impurities, then dry-fermented in cherry for 36 hours before de-pulping and moving to the drying beds. Processed using the same equipment previously used for a large batch of lemongrass Gesha, this lot picked up the distinct lemongrass character despite never being directly fermented with it.
The shared equipment carryover is the defining detail here — it's what layers a light lemongrass lift onto a classic Yellow Honey process, adding aromatic complexity without masking the Gesha's own depth.
THE CUP Bright and sparkling — dried apricot and tangerine open the cup with vibrant acidity, while a light lemongrass and jasmine influence lifts the aromatics on top. Expressive but balanced, with the infusion complementing the Gesha rather than defining it.
