A natural Pacamara from one of Ecuador's most celebrated producers. Juan Peña's Hacienda La Papaya has become a benchmark for what the country can produce — and this lot delivers with the variety's characteristic weight and sweetness, wrapped in melon, orange, and kiwi.

THE PRODUCER

Hacienda La Papaya is owned and run by Juan Peña in Loja — one of Ecuador's most consistently exceptional specialty coffee-growing regions. Juan is one of the country's most decorated producers, recognised across multiple top producer awards both domestically and internationally, with his coffees featuring in barista competitions worldwide. He grows a wide range of varieties across the farm — including Typica, Sidra, and Gesha — and is perpetually experimenting with processing and fermentation to push quality further.

A key figure in that work is Segundo Cartuche, the team leader for wet processing and drying, who brings scientific precision and refined measurements to every lot that leaves the farm. Juan also opens his facilities — including the nursery and micro-mill — to neighbouring producers, helping the wider La Papaya community grow alongside him. Every coffee produced here begins with genetics: knowing the mother plants, managing the nursery, and tracking each lot from seed to dried parchment.

THE PROCESS

Natural process, dried whole cherry with controlled fermentation and drying protocols — the result of the farm's ongoing experimentation with post-harvest technique.
