From Trinidad Peña Silva at Finca El Manto Verde — a clean, lifted, and bright washed Gesha from a small-output producer who rebuilt their farm around this single high-potential variety after coffee leaf rust devastated their original plantings. A story of reset and renewal, expressed in a cup of exceptional clarity. In the cup: yellow nectarine, rhubarb, and calendula.
THE PRODUCER
Trinidad Peña Silva's family had grown coffee varieties including Pache and Caturra in Chirinos, Cajamarca for generations — until coffee leaf rust severely damaged the farm and forced a complete reset. After removing the remaining trees, the family made a deliberate choice to replant with Gesha — seeds purchased from Franco Huaches Montalvan, the producer of La Lucuma, a high-ranking lot at the 2023 Peru Cup of Excellence. This washed Gesha is the result of that commitment: a very small-output, artisanally processed lot that reflects a producer rebuilding around a high-potential variety and a precise washed approach.
Gesha, first collected from the coffee forests of Ethiopia in the 1930s and brought to global prominence at the 2005 Best of Panama competition, finds compelling conditions at 1,900 MASL in Cajamarca's cool highland growing environment — where slow cherry development and mineral-rich soils allow the variety's hallmark florality and delicate stone fruit character to express themselves with full clarity.
THE PROCESS
The Washed process at Finca El Manto Verde involves:
🍒 Hand-picking — Gesha cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before fermentation 🧪 20-hour GrainPro fermentation — Beans fermented for 20 hours in GrainPro bags or similar material 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ 20-day raised-bed drying — Dried on raised beds for approximately 20 days until moisture content reaches 11%
The 20-hour GrainPro fermentation is the defining step — a short, precisely contained fermentation that supports sweetness and aromatic development without adding heavy fermentation character, preserving the clean acidity, defined fruit notes, and lighter, more transparent expression of the Gesha variety that defines this lot's lifted, clarity-forward profile.
