INTRO
From the Holguín Family — one of the partner producers in Inmaculada Coffee Farms' Fellow Farms project, processed at Inmaculada's facility with the same precision and care that has made the farm one of the most internationally celebrated in Colombian specialty coffee. A naturally processed Gesha of tropical fruit depth and floral warmth. In the cup: guava, red plum, and carnation.
THE PRODUCER
Inmaculada Coffee Farms' Fellow Farms project was launched in 2022 to support surrounding producers who lack access to processing infrastructure and expertise. Cherries from partner farms — including this lot from the Holguín family — are processed at Inmaculada's facility, sold under the Fellow Farms banner, and proceeds fed directly back into those communities, while the project simultaneously provides education on farming, harvesting, and processing practices to improve quality year on year.
The Inmaculada estate itself is one of the most celebrated specialty operations in Colombia — winning the World Barista Championship in 2015 when Sasa Sestic used their coffee, and famously revivifying the Eugenoides species to claim three of the top six WBC spots and the World Brewers Cup in 2021. The farm grows an extraordinary range of varietals including Sudan Rume, Gesha, Laurina, Eugenoides, Pink Bourbon, Chiroso, and Papayo, with sustainability and biodiversity at the core of everything it does.
Gesha, first collected from the coffee forests of Ethiopia in the 1930s and brought to global prominence at the 2005 Best of Panama competition, finds compelling conditions in Valle del Cauca — and under Inmaculada's natural processing, the Holguín family's Gesha delivers a tropical and floral expression of real warmth and depth.
THE PROCESS
The Natural process at Finca Inmaculada involves:
🍒 Hand-picking & sorting — Gesha cherries meticulously sorted to select only the finest ripe fruit before processing 🔒 Controlled fermentation — Cherries fermented under Inmaculada's precisely controlled natural processing protocol ☀️ Drying — Dried to optimal moisture content under careful monitoring
The controlled natural fermentation is the defining step — by applying Inmaculada's fermentation precision to the Holguín family's Gesha, the Fellow Farms process builds the guava tropical sweetness, red plum depth, and carnation florality that define this lot while maintaining the clean structure that keeps the cup well-defined.
THE CUP
A tropical, fruited, and warmly floral natural Gesha from one of Colombia's most celebrated specialty operations — guava sweetness, red plum depth, and a carnation florality in a cup that carries the quality standard of Inmaculada while bringing a new family's story to the international market. The Fellow Farms project at its most quietly purposeful.
