INTRO
A competition-winning lot from Fazenda Olhos D'Água in Campos Altos, 4th place in the Experimental Processing Category of the 2025 Brazil Cup of Excellence. Though entered as an experimental lot, it uses natural processing as its foundation, with highly refined fermentation control that unlocks the sweetness and complexity of the Arara variety. In the cup: mulberry, blackberry, and blackcurrant juice.

THE PRODUCER
Flávio Márcio Ferreira Da Silva is a second-generation coffee farmer who grew up on the family farm. After his father passed away, he continued the family business alongside his siblings. They manage the farm sustainably and, together with their team, tend meticulously to every coffee lot.

Arara is a natural hybrid of Yellow Catuaí and Obatã, celebrated for abundant sweetness and a clean, consistent flavour profile.

THE PROCESS
After harvesting fully ripe cherries, the coffee undergoes 24 hours of resting fermentation, followed by 48 hours of temperature-controlled fermentation in stainless steel tanks. It's then dried in thick layers under sunlight and rested for maturation.

The 48-hour temperature-controlled fermentation is the defining step. Together with the preceding 24-hour rest, it's what fully unlocks the Arara variety's sweetness and builds the dark berry character behind this cup.

THE CUP
Dark and sweet: mulberry and blackberry lead, with a blackcurrant juice depth throughout. Clean and consistent, with the abundant sweetness the Arara variety is known for.

About this variety

Arara can provide a sweet, full base that responds strongly to processing. In the reviewed extended-fermentation natural, that becomes creamy peanut-butter richness, orange-liqueur warmth and cacao. This is a producer-led expression rather than a fixed taste for every Arara coffee.

Why this one is different
  • Brazil
  • Minas Gerais
  • 1200 masl
  • Natural

This Brazilian Arara is creamy, nutty and gently boozy, with peanut butter, orange liqueur and cacao in the roaster's notes. At Jaguara, 80 hours of whole-cherry fermentation followed by natural drying is essential context for that richer style.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

Arara is a modern Brazilian cultivar, while this lot is grown by Natália Brito and André Luíz Garcia at Jaguara in Minas Gerais. Their extended-fermentation natural process makes the producer's method at least as important as the variety name in explaining the cup.

Identification note The peanut-butter, orange-liqueur and cacao profile is strongly shaped by Jaguara's extended fermentation and natural drying. It should not be treated as the default taste of Brazilian Arara.

Classification Brazilian Sarchimor-Icatu hybrid cultivar

Technical lineage Brazilian Sarchimor and Icatu hybrid material selected over successive generations.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
