INTRO
One of the estate's most technically sophisticated and complex lots, with every stage of the workflow finely calibrated within Elida's high-altitude environment. Jasmine and bergamot lead, with raspberry and nectarine sweetness underneath. In the cup: jasmine, bergamot, raspberry, and nectarine.
THE PRODUCER
The Lamastus Family Estate comprises four coffee plantations in Boquete, Panama, including Elida Estate, founded by Robert Lamastus in 1918. Across 65 hectares in total, more than half of Elida lies within the ecological protected zone of Volcán Barú National Park, a sanctuary for rare plant species, birds, butterflies, and mammals such as jaguars. Volcán Barú is one of the highest volcanoes in Central America, standing at 3,475 meters across 14,000 hectares, with seven distinct climate zones shaped by varying latitudes. That high-altitude terroir gives the region one-of-a-kind conditions for coffee.
THE PROCESS
This lot combines honey processing with Anaerobic Slow Drying (ASD), Native Yeast (NY), Carbonic Maceration (CM), and 3-day Rotary Fermentation (RF3D), followed by Cold Room Drying (CRD).
The stacking of these methods, each calibrated to the estate's high-altitude conditions, is the defining feature of this lot. It's what builds the layered jasmine and bergamot aromatics with raspberry and nectarine sweetness underneath.
THE CUP
Aromatic and layered: jasmine and bergamot lead, with raspberry and nectarine sweetness through the middle. A technically precise expression of Elida's Loma terroir.
