Shantawene is a washing station in the Bensa district of Sidama — one of Ethiopia's most celebrated growing regions, known for its extraordinary biodiversity of indigenous landrace and JARC varieties and the exceptional high-altitude conditions that define its finest lots. JARC 74158 — developed by the Jimma Agricultural Research Centre and catalogued in 1974 for its resistance to coffee berry disease and quality potential at altitude — is a variety that consistently rewards careful washed processing, revealing a delicate, aromatic, and fruit-forward cup that ranks among the most compelling expressions of Ethiopian specialty coffee. This inaugural release from Shantawene marks the beginning of a relationship that Apollon's Gold have been working toward with real anticipation.

THE PROCESS

The Washed process at Shantawene involves:
