INTRO
A washed Gesha from the Plano terroir at Elida Estate, finished with the Lamastus family's ASD fermentation and dark-room drying. At Plano's 1,700 masl, deeper soils and slightly warmer conditions naturally bring greater body and sweetness, giving this washed Gesha greater depth and a rounder, creamier structure while preserving the clarity and elegance of the variety. In the cup: orange blossom, red apple, lemon tea, and tuberose.
THE PRODUCER
Lamastus Family Estates is a fourth-generation Panamanian coffee family whose history in Boquete spans more than a century. It began in 1918, when Robert Louis Lamastus founded Elida Estate on the slopes of Volcán Barú; Amado Boutet established the family's roots in Boquete in 1925, and in 2014 Luito Lamastus planted a new generation of Gesha. Today the family farms five estates (Elida, El Burro, Luito Gesha, Cliff Gesha, and Trompo Gesha) across four microclimates, at up to 2,200 masl.
Roughly half of Elida Estate lies within Volcán Barú National Park, and the estate runs from about 1,670 to 2,200 masl. At the highest sections, night temperatures can fall below 10°C, slowing cherry maturation and giving the fruit more time to develop sugars and aromatic compounds. In 2026 Elida Gesha Washed Torre placed 1st in the Gesha Washed category at Best of Panama.
THE PROCESS
The Washed process for this lot involves:
🍒 Evening pulping — fully ripe burgundy cherries pulped on the evening of harvest
🔄 Rotational fermentation — a single cycle under Lamastus' ASD protocol, with the coffee mass carefully rotated for even development across every seed
🌑 Dark Room Drying (DRD) — dried slowly in a controlled environment without direct sunlight, limiting UV exposure and managing airflow to preserve delicate aromatic compounds and clarity
The single rotational ASD fermentation followed by dark-room drying is the defining combination. It gives the cup depth and a rounder, creamier structure while keeping the Gesha's clarity.
THE CUP
Floral and fruit-bright: orange blossom and tuberose florals, with red apple and a lemon tea finish, on a rounder, creamier structure.
