From long-term partners Diego Robelo and his team at Aquiares in Costa Rica, Prolog is excited to share Aquiares Esperanza Natural Anaerobic. This marks the fifth consecutive year of collaboration.

Aquiares is a leader in environmental stewardship, placing carbon neutrality and biodiversity at the heart of its practice. The farm monitors greenhouse gas emissions, offsetting them according to internationally verified standards under the IPCC framework. This work contributes directly to Costa Rica’s Nationally Appropriate Mitigation Action plan.

Beyond carbon management, the farm’s protected biological corridors provide a safe and thriving habitat for local wildlife and plant species. Aquiares regularly welcomes international researchers to explore topics ranging from agroforestry’s effect on soil health to the region’s biodiversity, with a special focus on birds and other wildlife.

Alongside its environmental initiatives, Aquiares is also a centre for varietal innovation. This coffee comes from the Esperanza varietal—an F1 hybrid born from a cross between Sarchimor T-5296 and wild Ethiopian ET-25. Developed at Aquiares and uniquely suited to its terroir, Esperanza combines resilience with exceptional flavour potential.

This lot was processed as a natural anaerobic and dried on raised beds in a solar dryer for 18–24 days.

In the cup: Juicy and tropical. A lively mouthfeel with a nutty, herbal edge that brings balance and depth.

What is the roast recency?

Prolog doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Prolog typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
